All\u00ed el cocinero recorre distintas regiones de Argentina para encontrarse con productores, agricultores, emprendedores, y familias dedicadas al desarrollo de distintos ingredientes y productos que se obtienen a nivel local.<\/p>\n\n\n\n<p>\u201cProyecto Tierras\u201d se trata de un ciclo cuyo objetivo es federalizar la gastronom\u00eda, mantener las tradiciones locales y transmitir la historia que hay detr\u00e1s de cada ingrediente. En este caso, la actividad del reconocido chef se centr\u00f3 el distrito de Rivadavia donde tiene su lugar el proyecto \u201cSuma Qaman\u201d<\/p>\n\n\n\n<p>El proyecto verde multiprop\u00f3sito que fund\u00f3 Diego \u00c1lvarez, lleva el nombre de \u201cSuma Qaman\u201d que deriva de la expresi\u00f3n aymara referida al \u201cbuen vivir\u201d e implica una cosmovisi\u00f3n en cada etapa del proceso productivo que le da un valor agregado, por medio de asociaciones con emprendedores.<\/p>\n\n\n\n<p>Hasta el momento, Suma Qaman, se lleva adelante sobre unas 100 hect\u00e1reas, pero su el plan es llevarlo a las 900 que tiene el campo mixto que poseen.<\/p>\n\n\n\n<p>Por su parte, Diego no se autodenomina productor agroecol\u00f3gico, y no le gusta auto etiquetarse de ese modo. \u201cMi otro yo viene de la agricultura comercial y todav\u00eda la sigue llevando adelante.
